Healthy eating isn’t all salads, good fats and water, it’s equally as important to treat yourself every now and again and what better way to do so than with these delicious pancakes. The recipe below serves 2- 4 people and to add an extra sweet kick, why not try adding a teaspoon of maple syrup or honey.
100g rolled oats
4 eggs
1 banana
1 teaspoon cinnamon
150ml water
Organic extra virgin coconut oil
(Alternatively use 80g of rolled oats with 20g desiccated coconut for a different flavour)
Blend the ingredients in a food processor. Melt some coconut oil in a pan and pour the batter into the heated pan by 1/4 cup, cooking for 2-3mins per side. Serve with your favourite berries.
